The dairy herd, composed entirely of the Pezzata Rossa Valdostana breed, grazes on the alpine pastures surrounding Ville Sur Nus. During the winter months they are fed hay from organically certified fields belonging to the farm in the municipalities of Quart (Ville Sur Nus) and Brissogne ( La Plantze). Combined, the specific types of plant life growing in these pastures and a ripening period of over eight months give this cheese a special flavour that pairs perfectly with full-bodied wines.
